The concept for the Mosaic Kitchen Project comes from being part of a large and diverse blended and extended family, and the sincere desire to make everyone feel as welcome as they truly are.  There is enough contention in the world without finding it at our kitchen tables.  When you sit at my table, I want you to know that you are treasured, that you have great value to the world, and that you bring me joy.

The recipes we provide on these pages are designed to include vegans, vegetarians, and omnivores. They are all written using only plant-based ingredients, then, may also contain suggestions for including foods provided by animals. This is especially adventageous for one who limits cholesterol or must avoid dairy and/or eggs for medical reasons but share a table with those who do not.

Finally, it is important to note that Mosaic Kitchen recipes are meant to be practical. They are quick and easy to prepare, and they all use ingredients that are readily available in regular grocery stores. When someone at your table has a special need or is making a choice to avoid certain foods for any reason, preparing separate meals isn’t necessary, and we’re all about proving it.
