Summer Kiss Float

When was the last time you had an ice cream float? A really delicious, frosty cold, bit of heaven on an exceedingly hot summer day…
There are so many treats we avoid these days just because when they are commercially prepared, over-sweetening spoils them. But sometimes we can redo them in a way that makes them even better than memories.
As far as we know, there is no such thing as apricot soda, but that didn’t hinder us, because we also know that a ripe apricot purees into the smoothest of any fruits. This quality makes it perfect for mixing with carbonated water or soda water to get a drink that is not only naturally sweet, but with all the nutrients intact, including Vitamin C, potassium, Vitamin A, protein, and fiber.
Note: the skin of the apricot is very tender, so there is no need to peel it.
We used carbonated water from our SodaStream, but any kind you have easy access to will do. Even without the ice cream, it turns the apricot puree into a refreshing, not overly-sweet, and all natural refreshment.
Summer Kiss (Apricot-Almond) Float
Serves: 2
Time:
2 whole apricots, ripe and soft
1 ½ cups chilled carbonated water
2 scoops So Delicious Vanilla Almond Milk Ice Cream
Cut the apricots in half and discard the stones. Place the apricot pieces in a blender and puree, adding just a tablespoon or two of the water if necessary, until velvety smooth. Divide the mixture between two glasses.
Pour ¾ cup of the carbonated water into each glass, and stir gently to combine. Top each drink with a scoop of the vanilla almond milk ice cream and serve immediately.
